Lactose-free cream products

Lactose-free cream products are made from fresh milk (100% cow's milk) by purely physical separation (centrifugation) of skimmed milk and cream. The lactose was previously removed from the milk using an enzymatic process.

Currently there is no valid legal requirement for lactose-free products, but only a recommendation of the German Food Chemistry Society, according to which the lactose content should be below 0.1%. Our lactose-free cream products meet this requirement. The fat content can be adjusted according to the customer's individual requirements. Available as fresh or gently heat-treated cream and, if desired, with various stabilising systems. Our customized developed milk products based on cream are also available as lactose-free versions on request.

Lactose free cream and sour cream products

Lactose-free cream products as ingredient for your trend products  

Lactose-free products have been an integral part of the milk products segment in food retailing for years. According to estimates, around 5 - 15 % of the population in Europe is affected by latose intolerance, i.e. they have problems digesting the milk sugar naturally contained in dairy products. In Asia, up to 90 % of the population is said to be affected by this intolerance. The demand for foods with little or no lactose has therefore been rising worldwide for years. And so is the demand for lactose-free ingredients for their production.  

For the production of lactose-free cream products, the lactose contained in cow's milk and thus also in cream is split into the more easily digestible sugars glucose and galatose. For this purpose, the enzyme lactase is added to the cream, which initiates the process of sugar splitting. To deactivate the enzyme again, the cream is heated in the following processing step. The taste of the cream changes slightly as a result of this pre-treatment, it becomes a little sweeter. As a positive side effect, the sugar content in the recipes of the end products can be reduced slightly during further processing into desserts or coffee cream. 

According to current legislation, foods may be declared lactose-free if they contain less than 0.1 g lactose in 100 g of food. In addition to lactose-free cream we can also develop customized milk and milk fat products for you on a lactose-free basis, especially according to your specifications.
