Créme fraîche is a fresh sour milk product made from soured cream with a mildly sour taste and a creamy consistency. The fat content is at least 30 %.
Créme fraîche is made from fresh milk (100 % cow's milk) by purely physical separation (by centrifugation) of skimmed milk and cream and subsequent acidification of the cream thus obtained with lactic acid bacteria. By pre-treating the cream, we can also offer this sour milk product as a lactose-free variant on request.

Crème fraîche is certainly one of the best-known sour milk products in Europe. In contrast to the firm sour cream (medium fat content) called "Schmand" with 18-24% fat that is also common in Germany, the typical crème fraîche has a fat content of at least 30%, which corresponds to that of normal sweet cream. The fatty cream product is acidified with the help of lactic acid bacteria, which gives it the typical fresh, only slightly sour taste and a rather creamy consistency.
Crème fraîche originally comes from France and is now very popular all over the world as an ingredient, especially when cooking, because when added to hot dishes such as e.g. soups or sauces, not as easily flocculated as the sour cream, which is often used as an alternative, or other low-fat substitute products. Because of the mild taste, crème fraîche is also very suitable for combining with fruit and rounds off sweet desserts perfectly.
